做法:洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和(hé )薏(yì )米。用(yòng )清水(shuǐ )把陈皮(pí )泡软,拍裂一小(xiǎo )块(kuài )姜,热(rè )锅,用(yòng )姜块在锅上擦一遍(biàn ),放两(liǎng )勺(sháo )油,待油(yóu )六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎(jiān )煮好的鲫(jì )鱼和其(qí )他材(cái )料,武火煮沸,转中(zhōng )小火煲一个(gè )半小(xiǎo )时,下盐(yán )调(diào )味即可(kě )品尝。
