做(zuò )法:洗净宰好(hǎo )鲫(jì )鱼,洗净淮山(shān )和薏米。用清水把陈皮(pí )泡软(ruǎn ),拍裂一小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺油(yóu ),待油六成热下鱼(yú ),煎至(zhì )微黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的(de )清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武(wǔ )火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲(bāo )一个(gè )半(bàn )小时(shí ),下盐(yán )调味(wèi )即(jí )可品(pǐn )尝。
