做法(fǎ ):春(chūn )笋切成片后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火煮(zhǔ )开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
