做法:洗(xǐ )净(jìng )宰(zǎi )好鲫鱼,洗净淮山(shān )和(hé )薏米(mǐ )。用清水(shuǐ )把(bǎ )陈(chén )皮(pí )泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在(zài )锅上擦一遍,放(fàng )两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎(jiān )煮(zhǔ )好(hǎo )的鲫(jì )鱼(yú )和其他材料(liào ),武火(huǒ )煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可(kě )品尝。
